In the heart of Irpinia originates Rubrato, a wine that expresses the pleasure of Aglianico in its youth.

Denomination: Irpinia Aglianico DOC

Grape: Aglianico

Fermentation: Fermentation and maceration in stainless steel tanks for about 2-3 weeks.

Maturation: About 8-10 months in stainless steel

Aging: 6 months in bottle

Organoleptic examination: Intense and lucid ruby red. On the nose, it recalls wild black fruit, licorice and the underbrush. In the mouth, it is balanced with a finish that is reminiscent of fresh fruit, ending with a delicate balsamic note.

Food pairings: It combines perfectly with roasted red and white meats, eggplant parmigiana and rice sartù (cake).

This most famous wine in literature and history is a blend of aglianico and piedirosso; the clusters are carefully quality-selected from the hillside vineyards on the San Castrese estate growing on the slopes of the extinct Roccamonfina volcano, in the province of Caserta. Showing a deep red, its intense, rich bouquet is brimming with fragrant sweet violets, wild black berryfruit, cherry, blackberry, and raspberry. The palate is full-volumed, elegant, and finely balanced in all its components

VINIFICATION
After de-stemming and pressing, the must ferments on the skins at 25-26° for about 20-25 days, with daily pumpover and délestages. Malolactic fermentation follows.

Half of the wine matures in one-third new Allier oak barriques, and the other half in the traditional 10- to 35hl large Slavonian oak casks, for a period of 10-12 months, followed by ageing in the bottle.

It is world-renowned for its ageing (at least three years one of which is in oak casks). It best represents the ancient Vitis Hellenica (Aglianico). It is made from selected grapes cultivated in only 17 villages, all in the province of Avellino. It shows ruby red colour with a light tone of orange, a dry and finely spiced aroma, a robust yet velvety flavour. It is superb with elaborate spiced dishes, game, red meats and cheeses. As with all great reds, it improves with ageing.

NOTES
Radici, produced for the first time in 1986, is the result of a long and careful research concerning exposure, chemical and physical characteristics of the vineyards’ terroir. Its strong, dense structure and the aromatic concentration are the most evident characters of the prestigious viticulture of Irpinia.

30 months in French oak barriques and Slavonian oak barrels. At least 36 months in the bottle before release
