After initial alcoholic fermentation the base wines, vinified
separately on the basis of origin, are aged for 8 months in
temperature-controlled stainless steel vats. Afterwards they are
expertly blended with noble reserve wines (at least 20%) from the finest vintages in the magical rite of cuvée creation. This technical detail gives Cuvée Prestige outstanding personality, further enhanced by bottle aging in underground cellars at a constant temperature of 12°C.
Tirage
From April to July each year.

For an average period of 25 months.
Dosage at dégorgement
10 milliliters of liqueur per bottle.

Vinification
Cuvée Prestige Rosé is made by separately vinifying Pinot Nero
and Chardonnay grapes. Once removed from their stalks the Pinot Nero grapes are gravity-transferred into vats and briefly macerated for 24 to 48 hours: just long enough to "capture the moment", creating that special, delicate shade of pink that distinguishes Franciacorta Rosé when bottled. Afterwards the must, separated from the peels, ferments in temperature-controlled stainless steel vats. The Chardonnay grapes are instead vinified the traditional way: after the bunches are pressed whole, the various portions of
must are fermented separately in temperature-controlled stainless steel vats. After 8 months of refinement the "magic rite" of cuvée creation begins, blending the Pinot Nero and Chardonnay base wines. The Cuvée Rosé thus created is bottled and aged on yeasts in underground cellars at a constant temperature of 12°C.

April of every year.

CUVÉE ANNAMARIA CLEMENTI Millesimato D.O.C.G. 2005.
Grapes Made from 55% Chardonnay, 25% Pinot Bianco and 20% Pinot Nero.
Harvest period
From 01th to 10th September 2005 with a meticulous
selection of grape bunches before crush began.
Average yield per acre
2,73 tons/acre; 296 gallons/acre.
Grapes componets
Sugar: Chardonnay 19.90% (20.80 °brix); Pinot Bianco 19.20%
(20.18 °brix); Pinot Nero 20.10% (20.98 °brix).
Total acidity (grams tartaric acid per 100 ml): Chardonnay 0.760; Pinot Bianco 0,750; Pinot Nero 0,670.
pH: Chardonnay 3.14; Pinot Bianco 3.10; Pinot Nero 3.24.
Vinification
After beginning alcoholic fermentation, the must is transferred
from temperature controlled stainless steel tanks to small oak
barrels where the alcoholic fermentation finishes and the
malolactic fermentation begins. The base wines continue to
mature in these small oak barrels for 7 months. This particular
advancement bestows to the finished product a spicy personality,reinforced by the aging in bottles which are kept in cellars at controlled temperature of 53°F (12°C).
Bottling
March 2006.
Length on the yeast
7years prior to degorgement.
Dosage liqueur
7,5 ml for a bottle, it is composed solely of mature white wines in oak barrels and with a minimum quantity of sugar.

Alcohol: 12.5% by vol.; Volatile acidity (grams acetic acid per
100 ml): 0.350. Total acidity (grams tartaric acid per 100 ml):
0.610; pH: 3.60.
