It is now universally recognized by the major wine experts that Rovereto's soil and microclimate are ideal for the production of an outstanding Gavi wine. In this small but privileged area we have also chosen the finest vineyards for the production of our wine. Said vineyards lie on soil made up mostly of calcareous clayey marl, rich in iron and magnesium. Yields are made to produce an elegant wine of exceptional complexity and surprising longevity. Before being pressed, a part of the grapes undergoes cold maceration (cryomaceration), to preserve the integrity of their characteristic aromas
