The "Aceto Balsamico Tradizionale di Reggio Emilia" with Protected Denomination of Origin, Red Loster Seal, by Acetaia Malpighi has a light, delicate scent to enrich thinly sliced raw meat (carpaccio), raw vegetable dips and salads.
It also lends an extra dimension shellfish, chicken breast, lamb cutlets and rarely cooked meats if simply added towards the end of the cooking time. It makes an ideal partner for braised or roasted game and chicken.
