Grapes 100% Aleatico

Vinification The grapes grown in the vineyards of the Aldobrandesca estate were picked when very ripe with a high sugar content. Some of them were fermented immediately while the rest were set aside for drying which lasted for about thirty days. This enabled us to obtain a structured, more concentrated and complex wine. The two batches of grapes were fermented according to the same process. Destemming and soft crushing were followed by maceration at a low temperature (about 5°C) for four days, in order to extract all the grapesÂ’ aromas and obtain a must with rich colour but without astringency. After removal of the skins the must underwent alcoholic fermentation at a temperature of 18°C which was then blocked by drastic cooling (up to 0°C) when it still contained a certain quantity of sugar. The wine thus obtained was kept at a low temperature until bottling.

History The Fattoria Aldobrandesca estate owned by the Antinori family is situated near the historical village of Sovana in southern Tuscany. The first vintage produced was 1997. This wine has distinctive personality, and pleasant, generous aromas typical of the grape variety. Taste Vibrant nose with distinctive hints of roses, typical of the variety. A sweet palate thanks to the sugar content, no harsh tannins but harmonious minerally sensations. The aftertaste reflects the typical flavour of the Aleatico grape.
