Characteristics: Intense and dominant nectar, wine energy; dynamic and lively; a fortunate match, almost a marriage of love, between two fine dark grapes, with an extremely pleasant mouthfeel; intriguing with a mellow and alluring texture. Pairings: It matches well with dishes like pappardelle with boar ragout, ravioli with veal sauce, a juicy steak with green pepper, oven-baked lamb with juniper sauce,stuffed rabbit with black truffles, hearty ossobuco Milanese-style. Matchless with an aged pecorino cheese.
