Vinification: Grown in hillside vineyards with a yield of 8.000 kg per hectare, the grapes are harvested by hand using crates that contain up to 18 kg of fruit.
The bunches are carefully de-stemmed and the must is fermented in contact with its skins for 4-5 days. The wine becomes effervescent with its initial fermentation and does not undergo secondary fermentation. No sulfites are added at any point during production.
Organoleptic characteristics
COLOR: Red and purple with hints of violet. Intensely colored but transparent in the glass.
TASTING NOTES: Nuanced, delightful aromas of wild strawberry, blackberry, raspberry, and other wild berries with a note of violet in the finish. Very dry in the mouth with mouth-watering acidity. This wine delivers complex flavors and lingering aromatics.
SERVING TEMPERATURE: 6°/8° C
RECOMMENDED PAIRINGS
Excellent with Emilian dishes and a great pairing for classic salumi like strolghino, ciccioli (cracklings), and cotechino. A wonderful fresh aperitif wine to enjoy with savory finger food.
