Montepirolo - DOC Colli di Rimini Cabernet San PatrignanoÂs greatest challenge. With Montepirolo we hope to measure our wines against the worldÂs greatest. Our grapes, blended with classic Bordelaise among others, let the fruits of our region shine - a product of absolute quality Grape varieties Cabernet Sauvignon, Merlot, Cabernet Franc. Vineyards Twenty-five hectares on the hill of Montepirolo form a single vineyard, with a mainly eastern exposure, where the guyot and spur pruned cordon training systems are used. Montepirolo is made from a selection of the best grapes from these 25 hectares, which give an average yield of 5500 kg/hectare Harvest Merlot is harvested in early September, Cabernet in late September/early October. The grapes are picked by hand, placed in small crates, taken immediately to the cellar and transferred to a conveyor belt for hand-sorting Wine-making Montepirolo is the result of a well-balanced assemblage of the wine from three grape varieties vinified separately. The skin maceration time will vary depending on vintage characteristics, thus intensifying the wineÂs aromas. After racking-off, the wine is transferred to barrique where the assemblage takes place. Complete malolactic fermentation Ageing In Allier/Tronçais/Nevers oak barriques for 12 months plus at least 18 months bottle ageing before sale Alcoholic strength13.5% - 14.5%, depending on the vintage Sensory profile The nose of this ruby-red wine is enlivened by balsamic touches together with blackcurrant, sweet marjoram, humus and liquorice. Powerful, well-rounded flavour. The palate reveals an excellent structure and a lengthy, vibrant finish with a perfect blend of acidity and tannins. Pair with beef braised in red wine; quails with thyme; delicate, elegant medium- or fully-mature cheese. Serving temperature 16 °C - 17 °C in large Bordeaux grand cru glasses, which give the wine the space it needs to breathe and reveal its bouquetÂs many layers
