Fermentation: in stainless steel tanks at 27-29°C
Bottling time: in the month in September of the second year following the harvest
Appearance: deep ruby red with garnet hints
Nose: fine and elegant bouquet with flavours of red fruits like blackberry and mulberry. Moreover, notes of myrtle and cinchona come along flavours of cocoa powder and a refreshing minty touch. The woody notes are very well integrated
Palate: the ripe tannins and the refreshing character outline this wine supporting a great potential for ageing
Food pairing: ideal to be paired to smoked salami and game
Dishes to be paired: lamb roll with herbs, kid baked in wood oven with olive and vine wood; veal fillet, roasted piglet and chicken
