TURQUOISE MOON

With its variations, its mystical beauty, it is a bridge between heaven and earth, between the real and the illusion, a celestial body lying on a turquoise sea at the foot of Vesuvius.

Scent: bouquet of very complex aromas of fruit, with marked hints of pineapple, yellow apple and citrus.
Flavour: Fresh,savoury, appreciable for its acidity balanced by the structure of the wine.

Vinification:
The grapes are harvested by hand and placed in plastic boxes previously sanitized, in each box are collected at most 15 kg of grapes, to avoid that during the transport there is a natural crushing of the grapes. An envelope containing dry ice is deposited on each box to keep the grapes at a right temperature to avoid early and uncontrolled fermentations. Once arrived in the winery, the grapes are processed in a destemmer, this process allows us to split the stalks from the grains and press them directly in a soft membrane press.
The must is then stored in steel vats at controlled temperature where fermentation lasts for about 8/10 days, after the fermentation the must is moved into steel tanks where it is waiting for the right maturation to be processed and bottled.
