FSM TAFIA
Area: Hilly area in the North of the province of Taranto.
Soil: Medium clay texture, shallow and with good skeletal soil.
Farming type: Espalier (4,000 vines per hectare).
Grape harvest: Last week of August.
Vinification: Cryomaceration in the press for 6-8 hours followed by gentle pressing of the grapes, cold static decantation and alcoholic fermentation at 11 °C.
Ageing: In stainless steel tanks.
Tasting notes: Pale straw color with bright green reflections; it opens to the nose with fragrant floral notes combined with hints of fresh exotic fruit; it envelops the palate in a decisive softness supported by a harmonious flavor and a good acidity.
Best served with: Ideal with seafood: mixed starters, raw shellfish, first courses with tomato-based fish sauces.
Serving temperature: 12-14 °C.
