Vines variety: 85% Negroamaro, 15% Malvasia Nera di Brindisi.

Area: San Marzano, Salento, Puglia. At about 100 meters above sea level.

Soil: Medium clay texture, shallow and with good skeletal soil.

Farming type: Espalier (4,500 vines per hectare).

Grape harvest: Second half of September.

Vinification: About 10 days of thermo-controlled maceration followed by alcoholic fermentation with selected yeasts.

Ageing: In French oak barriques for 6 months.

Tasting notes: Bright ruby red colour with garnet hues; intense bouquet with hints of cherry, plum, and spices, and of Mediterranean herbs; a full-bodied wine, with a pleasantly fresh aftertaste; best drunk young.

Best served with: Salami and cold cuts, richly flavoured first courses, red meat and cheese.

Serving temperature: 16-18 °C.
