FSM TASAL
Vines variety:Â 85% Negroamaro, 15% Malvasia Nera di Brindisi.
Area:Â San Marzano, Salento, Puglia. At about 100 meters above sea level.
Soil:Â Medium clay texture, shallow and with good skeletal soil.
Farming type:Â Espalier (4,500 vines per hectare).
Grape harvest:Â Second half of September.
Vinification:Â About 10 days of thermo-controlled maceration followed by alcoholic fermentation with selected yeasts.
Ageing:Â In French oak barriques for 6 months.
Tasting notes:Â Bright ruby red colour with garnet hues; intense bouquet with hints of cherry, plum, and spices, and of Mediterranean herbs; a full-bodied wine, with a pleasantly fresh aftertaste; best drunk young.
Best served with:Â Salami and cold cuts, richly flavoured first courses, red meat and cheese.
Serving temperature: 16-18 °C.
