More than 50 years ago 19 winemakers planted their most ambitious dream. Every drop of this red wine from their land celebrates their hope, their daring and their intuition.
Vines variety: Red grape vines, typical of Salento.
Area: San Marzano, Salento, Puglia. At about 100 meters above sea level.
Soil: Medium clay texture, shallow and with good skeletal soil.
Farming type: Head-trained bush vines (4,500 vines per hectare).
Grape harvest: September.
Vinification: Manual harvesting of slightly overripe grapes; destemming-crushing, and cold pre-fermentative maceration is followed by alcoholic fermentation with native yeasts. Final racking with gentle presses.
Ageing: Malolactic fermentation in stainless steel followed by ageing in French oak barriques for 12 months.
Tasting notes: Ruby red with purple reflections; intense and complex bouquet with fruity notes attributable to plum and jam, and spicy hints that recall vanilla and liquorice; intense on the palate, with great structure and smoothness, long finish.
Best served with: Richly flavoured first courses, red meat and game. A meditation wine.
Serving temperature: 18 °C.
