FSM PRIDOL
Faithful to tradition, we watch over the drying of grapes on just 11 rows of Primitivo vines, planted in their red, limestone-streaked soil.
With the patience that experience gives us, we coax precious drops of sweet nectar from the grapes to produce an inimitable wine, unplanned and unpredictable – like everything that is not strictly practical. To be savoured preferably whenever the mood calls for something special.
Vine variety: Primitivo
Area: Very old vineyards selected in the area of San Marzano (TA) and Sava (TA).
Soil: Finely textured residual red soil with a calcareous subsoil, sparse rocky outcrops and intense presence of iron oxides.
Farming type: Head-trained bush vines at least sixty years old (5,000 per hectare).
Grape harvest: Beginning of October.
Vinification: After being left to dry on the vine the grapes are harvested manually. The maceration takes place for 10 days with native yeasts selected in the vineyard. Fermentation takes place at a controlled temperature of 24-26 °C.
Ageing: In French and American oak barriques for 12 months.
Tasting notes: Intense ruby red colour with garnet shades; persistent and complex nose with hints of overripe fruits that recall cherry jam and dried figs; light spicy notes; pleasantly envelops the palate with a sensation of honey, balanced with the right amount of acidity.
Best served with: Almond-based confectionery, fruit tarts, intensely flavoured mature cheese. A meditation wine.
