The chickpeas of Controne is a native variety of Controne, recovered by old farmers. The seeds are intensely flavorful and fragrant.
It is smaller than common chickpeas and has a very thin integument. It is a highly energetic food with an excellent protein content. Chickpeas contain Omega 3 which, in addition to preventing states of depression, have the property of lowering triglycerides and, above all, are able to bring benefits to the heart rhythm thus avoiding the onset of arrhythmias in the heart.
In the kitchen, it also adapts well to velvety, sauces and purees such as beans. It should also be soaked for 12 hours.
