Terroir: plain area created by the alluvial fan of Cellina creek. A layer of alluvial deposits composed of thick limestone and dolomite of fluvial-glacial origin, at the foot of the Dolomites
Vinification: after being slightly pressed, the grapes are left to macerate in stainless steel containers for 5-8 days; during this time, continuos operations are carried out to completely extract noble polyphenols from the skin. The wine undergoes a malolactic fermentation process, during the alcoholic fermentation process. The maceration temperature is kept low to preserve the fruity notes
Maturation: maturation process occurs in stainless steel tank at constant temperature
Colour: purplish red
Aroma characteristics: intense, elegant and pleasantly fruity aromas. Herbaceous notes (typical of Cabernet) are mixed with fruity notes
Pairings: Pair with haute cuisine cold meats. Excellent with roast poultry or red meat and mildy aged cheese.
