Area of production: San Quirino (PN) - Friuli Venezia Giulia
Terroir: a plain area created by the alluvial fan of Cellina creek. A layer of alluvial deposits composed of thick limestone and dolomite of fluvial-glacial origin, at the foot of the Dolomites
Vinification: soft vacuum pressing (0.20 Atm) of the grapes. The must is cleaned through dynamic decanting. After inoculation of selected yeasts, the fermenting process starts at controlled temperature (14-16°C), always monitoring fermentation dynamics
Maturation: at the end of the fermentation process, the wine is kept on fine lees until bottling
Colour: greenish straw yellow
Aroma characteristics: flowery and fragrant scent
Flavour Characteristics: dry, fresh and light taste, with a lingering aftertaste. Pleasantly tannic. It acquires a pleasant creaminess during its fermentation process, which pairs well with its fruity notes
Pairings: Aperitif wine that pairs well with a wide range of light starters, soups and fish courses. Good with mildly aged cheese. Excellent with cold starters, lemony sauces, soups and vegetarian first courses, cream of soups and fish soups.
