VERDECA: Ancient white grape variety of uncertain origin, quite common in Puglia. Its highest productive and qualitative expression is linked to the territory of the Valle d’Itria, where it is cultivated on a hilly area that is well ventilated and has an excellent sun exposure. These conditions make it possible to produce fresh and aromatic, delicately fruity and elegant wines, which have nothing to envy to other similar grape varieties grown in more northern regions of Italy.

PRODUCTION AREA: high altitude vineyards (350 m a.s.l. or 1,148 feet) in the Itria Valley, central Apulia.
TRAINING SYSTEM: cordon trained, guyot pruned vines SOIL: eluvial, calcareous - clayey
PLANT DENSITY AND YIELD: 4500 plants per hectare and 2.5 kg of grapes per plant
HARVEST: manual harvest, between late September and early October.
VINIFICATION: Harvest in the early hours of the dawn so as to preserve the aromas and a subsequent soft pressing of the skins. Fermentation of the must with selected yeasts at a controlled temperature of 13 ° for 10 days.
AGEING: 3 months in stainless steel tank and 1 month in bottle.
ALCOHOL: 12,5 % CALORIES: 88 kcal / 100 ml T
ASTING NOTES: bright yellow color with greenish reflections. Delicate hints of apple, citrus and nuances of white fruits. Fresh and salty, with a long and elegant finish. SERVICE: 8-10 °C
FOOD PAIRING: dishes based on fish, shellfish and seafood, typical of Salento region. Also excellent on its own, as an aperitif or with appetizers based on delicate cheeses, unseasoned cured meats and vegetables.
