Grapes: Fiano 60%, Greco 15%, Piedirosso 25%.
Production area: Greci (AV). The vineyard is surrounded by coniferous forests at about 580m above sea level. The soil is highly mineral as evidenced by a source of excellent quality spring water.
Origin of the grapes: Vigna dello Scalo, Greci.
Soil: Clayey-calcareous with tuffaceous stratifications, medium depth and rich in minerals.
Training system: Guyot.
Harvest: Beginning of September.
Alcohol in vol. effective: 12.5%.
Bottles produced: 13,000 of 750 ml.
Vinification: Champenoise pressing of the whole bunches loaded into the press with an elevator belt to preserve their integrity. Fermentation of the three separate musts at a controlled temperature and subsequent cuveé immediately before the second fermentation. Permanence on the lees for a period between 16 and 24 months. Liqueur d'expedition according to the corporate style that ensures 8 g / l of residual sugars for the Brut type.
Pairings: Typically for the whole meal and for convivial moments, it can be combined with all Mediterranean cuisine with particular attention to seafood, fried foods and as an aperitif. To be served between 7 and 9 °.
