Made from Nebbiolo grapes from vineyards cultivated in Monforte d'Alba and Castiglione Falletto villages.
The classic Barolo is released as Armando Parusso had, not separating the single vineyards, but combining them in one unique blend.
Density of vineyards: 5,000 vines per hectare. Altitude of vineyards: 250/450 meters above sea level. Exposure: South-South/East-South/West
Grape Harvest: carefully by hand in small holed baskets.
Vinification: destemming; maceration with skins contact; the alcoholic fermentation occurs spontaneously with its indigenous yeasts without using sulfites with careful maceration and temperature time control.
Aging: in small oak barrels for 24 months in contact on its indigenous yeasts, in bottle for 12 months at controlled temperature of 15°C.
Color: ruby red, with garnet reflections. Bouquet: ripe fruit, spices, balsamic and mineral notes.
Taste: on the palate is harmonic, the tannins are delicate, with a lovely finish.
Shelf life temperature: 13°-15°C.
Serving temperature: 16°C.
Matching suggestions: ideal with delicate meat dishes as filet cooked on griddle.
