"I CRU" SELECTION
The CRU come from specific areas of production and, just as grapes are born under a particular sun and from a special territory, have a striking personality , and a definite taste and flavor. They are the immediate and savage expression of the cacao. The raw material arrives without being treated. The aroma has an overpowering strength, and sometimes the acidity can be felt more, and ends with a pleasant sensation of freshness and cleanliness.
The Cru explain the genetic differences compared to the cacao of today, initiating from the seeds which characterize the type of each plant, selected and cultivated according to precise rules by the producers in the countries of origin, fermented and dried under the control of Amedei's agronomists.
