MONT SPFIA
It is a valuable white sparkling wine made from the base wine Fiano (cf. the Grapes: Fiano di Avellino DOCG for the origin of the vine).
The grapes must be selected before reaching the full maturation in order to keep high acidity which acts as a protection in the absence of sulphur dioxide, in the course of its transformation into sparkling wine.
The sparkling process occurs according to the "Long Charmat" method through a refermentation in autoclaves.
It is well known that such method can turn out excellent in short times if applied to naturally fresh and fruity wines, and the Fiano naturally fresh and fruity graces this wine with elegance and intense notes of fruit.
Of straw yellow colour, dry with moderate sweetness, it is mainly drunk with cakes, cookies, fruit salads and biscuits, yet it is a joy served with fish dishes.

Harvest: From September second decade.
Harvest system: Hand-harvesting in 20-kg case Winemaking Cold maceration, soft pressing, fermentation at controlled temperature. Slow refermentation in autoclave for 7 months. Ageing/refining Ageing in bottle for 3 months.
Olfactory characteristic: It has hints of crust of bread, ripe fruit, dates and nuts on the nose
Taste characteristic: The taste is full-bodied and moderate sweetness on the palate. Total SO2 95 mg/l Bottles production 20.000 Yield grape to wine From 1 kg of grapes it has been producted 0,73 l of wine.
